The Cabernet Sauvignon undergoes 21 days of skin fermentation, during which the cap is carefully punched down by hand twice a day to achieve optimal extraction. Following fermentation, the wine spends a full year — 12 months — in oak casks to soften the tannins, polish the body, and build its elegant frame. True to the core values of natural winemaking, it's bottled with no added sulfites (SO2), completely unfined, and unfiltered.

The grapes are grown on the slopes of Baj, where clay, marl, and limestone soils give the wine its distinct, firm backbone and subtle mineral complexity.
