This Kékfrankos relies entirely on time and thoughtful structural layering rather than cellar additives — the vinification process of Koncz Réka Change of Heart avoids all shortcuts. The grapes are harvested by hand. Half of the harvest is gently crushed with a short 4–5 days of maceration with the stems. The other 50% undergoes a "hamburger method," where crushed, destemmed berries are layered with whole, uncrushed bunches to lock in vibrant cherry notes. Fermentation happens naturally, with no cultured yeast, in fiberglass and plastic tanks, allowing the true volcanic terroir to speak. True to her style, the wine bypasses oak entirely, aging gently in alternative vessels to preserve its bright, raw fruit profile.
