Break the traditional rules of wine tasting with one of the most playful bottles from the Hungarian low-intervention scene. PAP Wines Rabbit's Foot is a highly characterful, boundary-pushing cuvée crafted on the volcanic slopes of Szent György Hill. The label displays a beautiful 1964 ink drawing by István Molnár, titled "Card Players in Gay Hussar," which perfectly matches the lucky name of the wine. This liquid masterpiece brilliantly reflects the experimental spirit of winemakers Áron Molnár and Karina Vissonova.
The winemakers follow a very rare and creative approach to shape the structure of this wine, blending red and white grape varieties from two different harvest years. The robust base (70%) consists of Cabernet Franc and Zweigelt from an earlier vintage, which aged for 12 months in French barrique barrels. Afterwards, they layered this base with Pinot Gris (30%) from the following year, which matured for 4 months in traditional Tokaji Gönci barrels. Consequently, this unique aging process provides an incredibly juicy fruitiness alongside a velvety smooth texture.
The estate's vineyards thrive on eroded volcanic basalt and clay soils, which infuse the vines with rich minerality. The family manages their plots using a strictly organic and biodynamic philosophy, completely banning synthetic pesticides, herbicides, or artificial fertilizers on the mountain. In the cellar, they let native yeasts do all the work spontaneously, without any temperature control. The wine is unfiltered, unfined, and made with zero added sulfites (zero-zero).
In the glass, this low-intervention blend shows a translucent ruby color with a charming, slight natural cloudiness. The nose immediately reveals an expressive bouquet of fresh red berries, wild raspberries, and ripe cherries. Additionally, you'll notice a subtle sweet spice and mineral undertone from the combination of different barrels. On the palate, lively acidity balances beautifully with soft, well-integrated tannins.
This versatile wine works incredibly well with gastronomy. For instance, you can pair it with roasted duck, wild mushroom risotto, or artisanal charcuterie boards. We highly recommend serving this bottle slightly chilled, at around 14°C, to let the fruit and volcanic layers shine completely.
